Shrimp Taco Bites

What’s better than shrimp and guac piled on top of a crunchy tortilla chip scoops? Um….(scratching our head, thinking)…not much! That’s why we just had to share our delicious Shrimp Taco Bites that we just cooked up. You will absolutely love it. We sure did.

What You Need: Shrimp, limes, avocado, red onion, chili powder, cilantro, adobo chili sauce, sour cream, non-stick cooking spray and tortilla chip scoops.

Step One: Spray pan with non-stick cooking spray. Mix 1/2 tsp salt and chili powder in a small bowl. Place shrimp in pan, sprinkle the mixture on top and cook until the shrimp is pink and curls in on itself. Set aside.

Step Two: Mix the diced avocado, red onion, lime juice and remaining 1/2 tsp salt in a small bowl.

Step Three: Mix the sour cream and adobo chili sauce together.

Step Four: To create these shrimp taco bites, place a tsp of avocado mixture in a tortilla chip, followed by a 1/2 tsp of sour cream mixture, then top it off with a chili-lime shrimp.

Step Five: Sprinkle with cilantro and dig in!

Shrimp Taco Bites

Quick, easy and super addictive Shrimp Taco Bites that are great for snacking or a party.

  • 24 large raw shrimp, peels and tails removed
  • non-stick cooking spray or olive oil spray
  • 1 tsp salt, divided
  • 1 tsp lime juice
  • 2 tsp chili powder
  • 1 large avocado, diced
  • 1/3 cup sour cream
  • 2 tbsp freshly chopped cilantro
  • 1 tsp chipotle chilies in adobo sauce
  • 24 tortilla chip scoops
  1. Spray pan with non-stick cooking spray. Mix 1/2 tsp salt, lime zest, and chili powder in a small bowl.

  2. Put shrimp in the pan and sprinkle the mixture over the raw shrimp. Cook until shrimp started to turn pink and curl in on themselves.

  3. Meanwhile mix the diced avocado, red onion, lime juice and remaining 1/2 tsp salt in a small bowl.

  4. Mix the sour cream and salsa together.

  5. To create these shrimp taco bites, place a tsp of avocado mixture in a tortilla chip, followed by a 1/2 tsp of sour cream mixture, then top it off with a chili-lime shrimp.

  6. Sprinkle with the chopped cilantro. Enjoy!
