Summertime almost always calls for a few things. Beach vacations, barbecues, and the same-old, boring side dishes at those barbecues. We have a coleslaw recipe that is going to put all other side dishes to shame at your next summertime bbq and have your guests thinking they’re on a faraway island in the Caribbean while eating it! This Caribbean coleslaw recipe is both simple to make and delicious!
- 4 cups Chopped Cabbage
- 3/4 cup Chopped Purple Cabbage
- 1 cup Shredded Carrots
- 3/4 cup Diced Pineapple
- 1 cup Thinly Sliced Mango
- 3 tbsp Red Onion
- 1 cup Mayonnaise
- 1 tsp Dijon Mustard
- 3 tbsp Pineapple Juice
- 1 tbsp Sugar
- 1/4 tsp Celery Salt
- 1/2 Lemon (juiced)
In a large bowl, mix cabbages, carrots, pineapple, mango and red onion.
In a separate bowl, mix mayonnaise, dijon mustard, pineapple juice, sugar, celery salt and lemon until well blended. Should form a dressing type mixture.
Pour dressing over dry ingredients and mix until all ingredients are coated.
Chill for 30 minutes to an hour (or longer if desired).
Serve and enjoy!
We’re all about the simplicity! It’s a little chopping (unless you buy the pre-chopped ingredients) and little stirring and about a minute of mixing to make sure all of the ingredients are nice and coated, and that’s it! So simple! Less time spent cooking and more time for you to plan your next beach vacation!
