Caribbean Ginger Beer

In the last few years “Moscow Mules” and “Dark and Stormy” cocktails have become incredibly popular. The ingredient both of these delicious drinks share? Ginger beer! Today, we’re sharing our favorite recipe for making the tastiest Caribbean ginger beer known to man!

Caribbean Ginger Beer

Despite its name, ginger beer is actually a non-alcoholic drink that is most often used as a mixer for other cocktails. It’s tangy aroma and bitter aftertaste makes it a great partner for rum, vodka and many other spirits.

Caribbean Ginger Beer

  • 1 pound fresh ginger root
  • 12 cups water
  • 2 cinnamon sticks
  • 6 cloves
  • ¼ teaspoon allspice
  • 1/8 teaspoon nutmeg
  • ½ Fresh lime juice
  • 1 ½ cup raw sugar (more if desired)
  1. Wash and peel the skin off the ginger. 

  2. Using a cheese grater or blender/ food processor, grate or process the ginger. Grating is the better option, but either will work.

  3. In a large a large pot add water, cinnamon sticks, cloves, allspice, nutmeg and the lime peel, bring to a boil. 

  4. Turn heat off and then add the raw sugar. Stir until the sugar is dissolved. Taste, add more sugar if desired. Mix in the fresh grated ginger and lime juice.

  5. Allow the ginger mixture to cool to room temperature. Once cooled pour it into a large jar with a lid. Refrigerate the ginger beer for at least 24 hours or up to a week. The longer it sets the more flavorful it will be.

  6. When ready to serve, strain the beverage through a cheesecloth or fine colander.

  7. Serve cold. Garnish with lime wedges, fresh mint or a slice of ginger.
