With National Mimosa day right around the corner (it’s May 16th, incase you didn’t know), we thought it was the perfect time to whip up a Caribbean mimosa that had us dreaming of being on an island, tucked away somewhere in the Caribbean. We all know, every great mimosa starts with one basic ingredient, champagne, and whatever else you throw in to it can only make it better, and boy did we throw in all of the right stuff.
- 3 parts Champagne
- 2 parts Pineapple Juice
- 2 parts Malibu Rum
- Dash Grenadine
- Frozen Pineapple (to garnish and chill)
Combine all ingredients, and top with extra champagne if desired. Add frozen pineapple for garnish or as a way to keep your drink cold, and enjoy!
