written by Tiffani

When most people think of the beach, their mind goes straight to frozen drinks and lounging on beach beds. While today’s recipe doesn’t technically involve either of those, it does have us imagining… Today’s Margarita bars recipe is the perfect thing to celebrate #NationalMargaritaDay with! The alcohol cooks out, and you’re left with the delicious gooeyness of a sweet and tangy filling, paired with a savory pretzel crust!

Margarita Bars

Pretzel Crust

  • 2 sticks Butter (softened )
  • 1 cup Flour
  • 1/2 cup Sugar
  • 1 cup Crushed pretzels

Filling

  • 6 large Eggs
  • 3 cups Sugar
  • 4 tbsp Lime zest
  • 3 Limes, juiced
  • 1/2 cup Tequila
  • 1 cup Flour
  • Powdered sugar & lime zest to top

Pretzel Crust

  1. Preheat oven to 350 degrees F.

  2. Mix together all ingredients for crust, and spread evenly across the bottom of a 9×9 baking pan.

  3. Bake for 15 minutes or until a light, golden brown color.

  4. Remove from oven and let cool. While cooling, prepare filling.

Filling

  1. Zest and juice the limes.

  2. Combine eggs, sugar, lime zest, lime juice, flour, and tequila. Whisk until combined.

  3. Pour on to cooled crust, and place back in the oven for 30 minutes, or until center is firm and does not jiggle.

  4. Remove from oven and let cool.

  5. Garnish with powdered sugar and lime zest, and enjoy!
